What’s for dinner?!

If I am not running after babies in the hospital, I am certainly running after them at home. The thought of cooking dinner after working long hours brings me to nausea. There are a variety of meal plans to choose from and this month we chose the plant-powered plan so we can continue to meet our health goals. The ingredients are pre-measured and sent right to our door so this busy mama can whip up a 5 star recipe after a long day at work and skip grocery shopping.

Today, we made squash and mozarella flatbread and it was quite delicious! Even the kids liked it although I put more mozzarella than squash on their pieces.


Here is the recipe and it took us about 25 minutes to prepare and only 750 calories per serving! Each kit comes with all of the ingredients and an easy to follow recipe.

Ingredients

Flatbread

Yellow squash

Fresh mozzarella cheese

Shallot

Honey

Pine nuts

Crushed red pepper flakes

Prep:

Preheat oven to 400 degrees

Trim and slice the squash

Trim and cut the shallot

Dice mozzarella cheese

Toast pine nuts in frying pan and transfer to a cutting board

Cook squash and shallot

Place flatbreads on a lightly oiled baking sheet and lightly season with salt and pepper. Top with squash and shallot and mozzarella

Drizzle honey over the flatbreads

Quarter the flatbreads

Sprinkles with crushed pepper flakes

There you have it! A healthy delicious meal without the stress of going to the grocery store.
